Sugar, Flour, Sticky Hands and Gluten Free Bisquick and Baking

I will freely admit that I have a few obsessive compulsive tendencies.  When I fill my car with gas, I always stop on an even dollar amount.  I don’t know why, but uneven numbers bug me.  I am not a neat freak, but I hate sticky stuff on my hands, my counters, my table tops etc.  Sticky tables at restaurants send me over the edge.  And my biggest thing is that I hate flour.  It gets everywhere.  My most traumatic moment in this area was watching Budgee’s mom make Cinnamon Rolls in my kitchen, her hands covered in dough, opening my kitchen cabinet.  I was following her around the kitchen cleaning up a dough trail after her, holding my hands out trying to catch the trails before they hit my floor.  It was not a Mother-in-Law/Budger bonding moment.

So with all of this Budger weirdness, I don’t very often go into the kitchen to bake.  Looking back, it is probably a good thing that there are no little Budgers because I would own stock in wet wipes, and my children would not be allowed to touch anything.  As it is when I see children covered in ice cream, while everyone else is going “Oh how cute!” , I’m thinking “no toucher Budger”.  My one exception, Margaritas.  I will freely get sticky stuff on my hands if it involves Margaritas.  But I digress.

Once I found the Gluten Free Bisquick in the store, I thought I’d give it a whirl. There are some things that I’m missing enough to put up with a flour clean up and the potential for stickiness.  I used to go to Starbucks every morning.  I’d get a Venti Non-Fat Latte, and occasionally I would get a Blueberry Scone to go with it.  But that was before, and now when I do get my Latte, which is rarely, I go without the scone.  But Gluten-Free is Life posted a recipe for Gluten-Free Blueberry Scones made from Gluten Free Bisquick, and I decided I had to give it a try.

It took two tries, but here are my results.  They are so good.  Unfortunately they’re sticky because I used Brown Sugar instead of Sugar in the Raw, but that’s why I keep wet wipes in my office.  Are we catching a little bit of weirdness here?  I also substituted the low-fat yogurt for regular yogurt.   As I made them, they are 178 calories and 4g of Fat.  The recipe is really easy, and you can find it on the Gluten-Free is Life post.  Thank you Kimberly at  Gluten-Free is Life

Gluten-Free Blueberry Scones

So how good are these scones?  Well they are so good, that yesterday I took one to work, and on the way I stopped at Starbucks to get my Venti Non-Fat Latte to go with MY scone.  Ahhhhhhhhhhhh coffee, a scone and wet wipes.  Life is good.

In other news, I’m gathering up some summer recipes to make while I’m off work for a week.  No change on the scale.  But I didn’t gain either.
