Foodie Friday ~ Peanut Butter Rice Krispie Bars with Chocolate/Butterscotch Topping

It’s time for Foodie Friday and I’m re-posting this very popular Rice Krispie Bar recipe. Gollum at Designs by Gollum is the hostess for this weekly event. I made these for my kids for our Memorial Day Celebration in Washington State!

To make these wonderful bars you will need 1 cup sugar, 1 cup Karo Light Corn Syrup, 1 cup Creamy Peanut Butter, 6 cups Rice Krispies, 1 cup Butterscotch Chips and 1 cup of Semi-Sweet Chocolate Chips.

Bring 1 cup sugar and 1 cup Karo light syrup just to a boil mixing well. Take off heat and add 1 cup peanut butter and mix till smooth.

Add 6 cups Rice Krispies and mix till all the krispies are coated well.

Put this mixture into a well greased 9×12 pan and press down evenly into the pan. Empty chips into microwaveable bowl and microwave at 3-30second intervals, mixing well after each 30 seconds. Mix together till smooth. (You can use the double boiler method to melt your chips if you prefer). Pour entire mixture on top of the pressed down Rice Krispies and spread to cover. Let them cool and then enjoy!

All righty then…I’m going to do some shameless name-dropping so if you can’t stand that sort of thing stop reading right now. The very first time I enjoyed these bars was at a Young Marrieds Sunday School event in the late Seventies. The gal that made these bars and brought them to share is George Lucas’ sister. Yes, the George Lucas of Star Wars fame.  She and her husband were in our Sunday School Class at Huntington Beach E.V. Free Church. Fun times.

  1. That’s a new twist on an old favorite for me–It looks delicious, but what I really am loving is that tablecloth–blue and yellow, my favorites!

  2. OH GLORY…and with Dark Chocolate chips…oh my. I found a recipe that added mini oreo cookies…they were okay, but this looks even better

  6. When I found out that my Grandson-in-law to be loved this treat, I had to make them (for him) to take to a family outing…what a sweet way to make points with our new family member. Thanks for a really yummy recipie! I fel guilty that they are so easy to make !!

  7. My Mom always made them this way when I was growing up (in the 70’s)! I never had them the traditional way until I ate at a friends house. I like chocolate and peanut butter way better than marshmallow any day!

  8. I’m going to a vineyard tomorrow night to hear Shades of Blue (a birg band) and dance. I was charged with dessert. I will give this a try – chocolate and PB are a favorite combination.

  9. I just made these tonight and they are yummy but a little too sweet for my taste. Should I omit the sugar and just use corn syrup next time or use 1/2 c sugar & 1/2 c syrup?

  12. Enjoyed this recipe at a church social. Intend to make them for friends in Florida this winter. Even the older folks enjoy peanut butter and chocolate with rice krispies.

  13. This recipe looks good! I am so tired of having to buy them at a bakery or gas station when I am in the mood for one! I think I will reduce the sugar a bit, but cant wait to try them. I will leave a message on what I think about them…although I am sure that I will have to wipe my fingers clean first!

  14. These look great! Can anyone tell me what the difference between using butter and corn syrup in the recipe is? I’ve only used butter, not corn syrup, before and am just wondering if there’s a big difference or a reason to switch. Also – does anyone think these bars are too sweet? These sound amazing to me, but I’m looking to bring a “neutral” dessert to work that everyone can enjoy!

    This is Julie’s Husband. Mike Thompson. I went to Huntington Beach EV Free in late 70’s as well. Weird. My wife was looking for this recipe and saw your post about Wendy Lucas (Myers at the time) whom we still stay in touch with. (Dan was my Sunday School teacher during Junior High. My Parents are Ray and Ladeine.

  19. OK—you say 1 cup each of the butterscotch and chocolate chips then you say “empty both packages of both chips”. The size of a bag of chips is usually more than 1 cup isn’t it? So will I get too much topping if I use an entire package? Or do I just use 1 cup of each type of chip? Just wondering?

  23. I was making these bars in the 60s. I don’t remember the sugar, but I do remember the peanut butter and corn syrup. Also, chips came in 6 oz packages then as well as the 12 oz, so it was one bag of each of the small bags melted together for the topping. Cut these small, they are so rich.

  24. Now that they make gluten-free rice krispies we are totally trying these tonight, without the butterscotch, since they also have malt in them. So excited to try out a fun new recipe!
