Hi your site is lovely. I am Mauritian living in the UK. My mum loves a special semolina type grainy ball cake. (not laddu or halwa) it crumbles and grainy like sand packed tight into a ball with a bit of elaichi. Don’t know what the name is. They give it at weddings sometimes. Do you know what it is called and if possible get the recipe from somewhere? Many thanks. Wahida

I think you are looking for ounde…
Its boil water, sugar with cinnamon pieces and crushed elaiti for abt 15-20 min to get the elaiti and cinamon taste..once its boiled take out the cinamon pieces n elaiti…
then in a hot dry pan put the semolina and grill it until it turns light brownish color ( be careful it can burn easily) . Once its brownish… add in the boiled mixture slowly till all the semolina can stick together.. then you can add some raisins in.. when its half cold shape it into balls and rub into shredded coconut.. you can also put it in a plate and let it shape and cut it into smaller pieces..

This site is amazing. I love cooking and my family and Australian husband absolutely love muritian cooking. There are a few recipes that i am after. One is the gateau genoise and the other one is this sweet that is served at muslim’s weddings. It is sort of like a vermicelli and its white. Does anyone know what im talking about? If you could get your hands on those recipes it would be greatly appreciated.

hey yusra! it all depends on how sweet u want them to be, some like them to be sweet and syrupy and therefore soak them for a longer time. I prefer mine to be soft and moderately sweet so I usually dunk them for only few minutes.

Hello Yusra, I’m sorry to hear that you’ve been having problems with bread dough. Please let me know what went wrong exactly and which recipe u used so that I can help u further. I do not have a bread machine but I occasionally use my food processor [dough hook attachment] for mixing. It’s an old Braun model I bought in Kalachand years back and is still serving me faithfully. hi i dnt own a hand mixer so i wnt be the best person to advise u abt which attachment to use for bread dough. it is an easy recipe to do by hand though, i did not use any machine to process this one and it worked fine. maybe ur second attempt will be more successful 🙂

Hello Naz, I dnt think u can find corn syrup over here, I have not seen it myself so far. Substitues you may use are glucose syrup and golden syrup found in all major supermarkets. Good luck!

hello naz, thanks for ur interest in the blog. the angel cake is a lovely choice but I would recommend that u serve it with freshly whipped cream or a fruit coulis. Buttercream might be too heavy and sweet and will not pair nicely with the light, airy texture of this sponge-like cake. However if u still want to go along with the buttercream, I think swiss meringue buttercream would work well. It’s a step ahead of the classic buttercream both in terms of effort and taste. hello tass, I substitute buttermilk by either yogurt of milk curdled with either white vinegar or lemon juice depending on the recipe. It usually works out fine for me 🙂

Hello Tass, I bought the cream of tartar at shoprite, it is sold in small sachets in the baking section next to baking soda and Epsom salts. The brand was Robertson and I think it costs less than Rs10/sachet. Hope this helps!

Hi Tass, sorry I do not have a proper chocolate sponge cake on the blog. Need to make up for that soon. For now I suggest that you try this one: http://www.aww.com.au/food/recipes/2012/3/chocolate-sponge-with-coffee-icing/. If you do not like the icing, simply replace it with chocolate ganache. The Ferrero cake is also a nice though more sophisticated cake which I would not advise for a birthday party esp if you do not know whether your guests have nut allergy. Better go for a simple sponge and go crazy with the decorations. Wishing your little boy a very happy birthday!

sure you can use a simple syrup of 1 part sugar and 1 part water and flavour it with vanilla bean if you wish, easiest way to keep the sponge moist and yummy. You can even split the cake into layers if you want to make a big cake. Sandwich them with whipping cream, cover with ganache and enjoy!

I’d made dholl puri last night. following your recipe…it turned out great. This time they all puffed so nicely and when you break them the dholl just sprinkled on the plate…I think the secret lies in the 1 tbs oil mix with water…Before my husband teased me for the awful dholl puri I made and I always put the blame on the flour ,saying “we don’t have la farine Australie in the Uk” but last night he said” aster tone gagne la main mo mama”. Thank you so much…These recipes bring memories of my childhood and long lostt events associated with some dishes…and make me so homesick. Thanks again.You are AWESOME!!!!

hi I think u can use liquid milk in this recipe since the batter is pretty liquid itself. Not sure about the amount though, it needs to reach a consistency a bit thicker than you can pour. The electric steamer should work fine. Do let me know how it turns out. Cheers!

Hi Prerrna, can you guess which recipe I tried yesterday,on a freezing night where the temperature had plummeted to -5? KULFI…it was SUPERB!!!! and sitting around the fireplace everybody was asking for more…next time I’ll try with more than 1L of milk.Thank you so much..

Hi I tried the macatia it came out lovely…but the only thing is the coconut filling inside came out dry so we added butter to the hot buns, it was delicious. Next time I think I need to add more sugar and a little more water.Also the cooking time took less than 20 mins…it was ready in around 14 mins..luckily I checked. Thank you so much.You are an angel.

Hi Prerna I made gato cravats today. It was a disaster. It was not like I used to buy when I was small. I did not put any aginomoto because I think it’s lethal for me. It makes one drinks gallons of water.do you have to rest it to get the gluten working. It did not mention in your receipe. I shall try kaja next. It’s my husband favourite when he was in Mauritis.however thanks for the reveipe.

Hi ..once or twice ate Dal saga at my chachi’s place when I was a chid.Could be it was named differently.It was a spicy soup like dish with split peas(dal petit pois)and bréde songe.I have no idea how it was cooked.
Can you please post the recipe for cheese cake.. the none bake one,the one with crushed biscuits as base.I have tried it but it does not set.

HI Nishta thanks for writing. It reminds me that I have not baked a red velvet cake for ages! For the red colour, I use Wilton’s gel food coloring which you may find at NuzNai Trading, Rose Hill. [http://www.wilton.com/icing-color/pg_icingColors.html?dwvar_pg__icingColors_color=Red-Red#start=1] It is more expensive than the traditional liquid colouring from supermarkets but you will use it for a long time as only a small amount will give excellent results.
