Fettucini con funghi porcini

Fettucini with porcini mushrooms

3 garlic cloves
oil olive
1 - 1 1/4 lbs porcini mushrooms
1 box fettucini pasta - ideally fresh egg pasta

1. Rinse mushrooms and slice. Put in bowl of water with strainer to sit for about an hour so they get really clean.

2. Finely chop garlic, put in pan with oil over medium heat, cook 3-4 minutes, don't brown garlic.

3. After straining mushrooms, toss in pan with oil and garlic, cook for 45 minutes to an hour until water has been cooked away (mushrooms have a very high water content).

4. Cook pasta in water with good amount of sea salt and add directly to pan with mushrooms. Combine thoroughly and serve immediately.
