Oatmeal Peanut Butter Cookies

Last night I was in the baking mood. I made gluten free oatmeal peanut butter cookies. They are pretty good!  Not the best peanut butter cookie I’ve made, but it gets the job done.  They have a chewy and soft texture to them.  If you like peanut butter, you’ll like these.

I didn’t have many ingredients on hand, and did not want to run to the grocery store, so this recipe was perfect! It only called for 5 ingredients: peanut butter, oats, egg, brown sugar, and baking soda.  So simple to make!  Just mix all 5 ingredients, roll into balls, and stick in the oven at 350 degrees for around 12 minutes.

I found the recipe by googling, here, and just tweaked it a little since I did not have gluten free vanilla or chocolate chips.  Chocolate would have probably made them a lot better though.  I also used gluten free rolled oats and super chunky peanut butter (shown below). I just did a half batch as well, because having a full batch of cookies laying around is not always safe.

  1. This looks great, I haven’t gotten my hands on gluten free rolled oats yet, but as soon as I do, I am making these for sure!

  2. Thanks! Gluten free oats are a little more pricey (as is everything else GF), but they are worth it.
