Marlon’s Favorite Chicken Pasta

In the spirit of a “The Godfather” movie night, Amber and I decided to whip up an Italian dish for dinner. We created the following recipe and dubbed it “Marlon’s Favorite Chicken Pasta.” Our recipe calls for very few ingredients and is super easy to make.

Ingredients:

2-3 lbs. of chicken breast
8 oz. of angel hair pasta
½ cup of kalamata olives
¼ cup of capers
1 cup of cherry tomatoes
1 jar of spaghetti sauce (your preference)
Salt
Pepper
Rosemary
Garlic Powder

Directions:

Season the chicken breasts to your liking with salt, pepper, rosemary, and garlic powder. Place them in a hot skillet with olive oil and brown on both sides. Once browned, pour in spaghetti sauce and bring to a boil. Bathe the chicken with the sauce so that it heats chicken on all sides.

Add the kalamata olives, capers, and cherry tomatoes to the skillet. Cover with lid and simmer for 20 minutes.

Bring a large pot of water to a boil and cook angel hair pasta according to the directions on the box (usually it will take around 6 minutes to cook).

Drain pasta; check chicken and make sure it is cooked all the way through with no pink in the center. Spoon pasta onto a plate and serve the chicken breast and sauce on top.
