The La Caja China is a wooden box with the inside surface covered in metal that uses charcoal on the top to generate the necessary heat inside the box to cook any meat or vegetables.
Our Model No. 1 70 lb La Caja China measures 48 x 24 x 24" and will roast up to a 70-80 lb (live weight) pig, lamb, or goat.
Our Model No. 2 100 lb La Caja China measures 48 x 24 x 24" and will roast up to a 100 - 110 lb (live weight) pig, lamb, or goat.
Except for the SP-Series models, your new roaster comes unassembled and requires basic assembly, which usually takes about 30 minutes. Here is our assembly video that shows you step by step how easy it is.
